Roasted Broccoli Dijon Salad

Ingredients

Red Rice

  • 1/4 tsp garlic powder
  • 1/4 tsp Trader Joe’s onion mix
  • 1 tsp sea salt
  • 1/4 tsp black pepper
  • 1 cup Lotus Food Red Rice
  • 2 cups water

Broccoli

  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • 2 pounds frozen cut broccoli

Toppings

  • 1/2 cup cranberries
  • 1/2 cup slivered almonds

Garlic-Dijon Vinaigrette


Instructions

To Make Red Rice

  1. Mix all ingredients, boil rice, reduce heat and cook for 30 minutes.
  2. Fluff and set aside.

For Broccoli

  1. Combine broccoli ingredients and bake in oven on 375 for 15-20 minutes.

Everything Else

  1. Blend vinaigrette ingredients and put to the side.
  2. Combine rice, broccoli, and toppings with vinaigrette. Serve and enjoy!
