Adobo Green Bean Quinoa Salad

Description

Unlike your ordinary salad this guy has no lettuce – only quinoa serves as the base. Each component of this salad is cooked or prepared separately and the difference is in the taste! maximize on each layer’s own flavors. These flavors will dance in your mouth in perfect harmony.

Ingredients

Green Beans

  • 7 oz green beans
  • 1 tsp avocado oil
  • 2 pinches sea salt
  • 1 pinch black pepper (or to taste)

Black Beans

  • 4.5 oz black beans (cooked or canned)
  • 1/8 tsp sea salt
  • 1/8 tsp cumin
  • 1/4 tsp adobo spice

Quinoa

  • 20 oz filtered water
  • 11/3 cup quinoa
  • 1 tsp adobo spice
  • 1/8 tsp black pepper
  • 1/8 tsp sea salt
  • 1 tbsp tomato paste

Onion Mix

  • 1/4 onion (cut into thin strips)
  • 1 tsp avocado oil
  • 1 pinch adobo spice

Garlic Olive Oil Dressing

  • 1/3 cup extra virgin olive oil
  • 6 cloves garlic
  • 1/8 tsp black pepper
  • 1/4 tsp sea salt
  • 1/16 tsp adobo spice

Instructions

  1. Green Bean Ingredients Instructions: Cook green beans with ingredients in its section for 5 minutes. Do not let the green beans get soggy – unless that’s your jam. Put in a bowl and set aside.
  2. Black Bean Ingredient Instructions: Combine all black bean ingredients in a bowl.
  3. Quinoa Ingredient Instructions: Cook quinoa according to package. Once it’s done cooking and while it’s still hot, add in spices and tomato paste.
  4. Garlic Olive Oil Ingredient Instructions: Mince garlic cloves with black pepper, sea salt, and adobo spice. Put 2/3 of the mix to the side. Take the rest of the mix and combine with the olive oil in a bowl and put to the side.
  5. Onion Mix Ingredient Instructions: Cook onions with oil and adobo. Add garlic and cook until both onions and garlic are soft.
  6. Once everything you’ve cooked has cooled, combine everything in a large bowl and enjoy! You might want to go easy on the olive oil dressing since that garlic is strong (but also very delicious).
